Ingredients

  • 1/2 cup minced parsley
  • 2 grated garlic cloves
  • 4 tablespoons chopped pecans
  • 4 tablespoons chopped dried cranberries
  • 2 thinly diced green onions
  • Zest of 1 lemon
  • Salt & pepper to taste
  • 1 brie wheel, 8 ounces
  • 1 tablespoon olive oil, for rubbing
  • Toasted bread or crackers for serving

Instructions

  1. Prepare the gremolata first, which can be made ahead. Mix the parsley, garlic, pecans, cranberries, and green onions in a bowl with a fork. Add salt & pepper to taste, and finish with lemon zest. Set aside, or store in the fridge covered until use.

2. Preheat the grill to medium heat, about 325-350°F. Clean the grill grates to prevent the cheese from sticking or ripping. Rub the brie cheese with a thin layer of oil and place over the coals. Grill for about 2-3 minutes on each side, continuing to flip until it feels warm and gooey on the inside. Remove the brie carefully and place it on your serving tray right away.

    1. Serve immediately with toasted bread, crackers, and the cranberry gremolata.

    Notes

    • Use a grill spatula — not tongs — to flip the brie carefully. The cheese will be melty inside, so you’ll need to stay nearby and watch closely.
    • Grilling brie tastes the best over charcoal or wood fire, but this will also work on any gas grill.
    • Add a little olive oil to the gremolata if you’d like it to be a little more saucy. Just a little at a time until it’s a consistency you enjoy!
