Your Super-Easy Spinach Dip Super Bowl Recipe

BAKED SPINACH DIP + CRUSTY BREAD, SERVED WARM
Ingredients:
• 0oz spinach. Fresh is best, but frozen works, too.
• 8oz cream cheese, softened
• ¾ cup sour cream
• 2 tsp minced garlic
• 1 tsp onion powder
• 1 cup shredded mozzarella cheese
• 1 cup grated parmesan cheese
• ¼ tsp salt, or to taste
• ⅛ tsp black pepper, or to taste
Supplies:
• Medium mixing bowl
• Small baking dish suitable for serving, or
• A serving bowl for the ‘Bowl party table
DIRECTIONS
1. Preheat the oven to 400°F
2. Spray a suitable baking dish (about 1-quart should do it) with non-stick spray
Prepare the spinach:
• If it’s frozen: thaw the spinach, wring out ALL the excess water (important!), and chop it up finely
• If it’s fresh: sauté or steam the leaves for 3 minutes, remove the excess moisture with some absorbent toweling, and chop it up finely
Prepare the dip:
1. In a medium mixing bowl, add your cream cheese and sour cream. Fold it over until it’s even and smooth (you can also use a hand mixer on the lowest setting)
2. Add the garlic, onion powder, mozzarella and parmesan cheese, and salt and pepper and stir it through
3. Mix in the chopped spinach bit by bit, until it all looks even
4. Transfer the mixture onto your baking dish and place it in the oven for 15-20 minutes. If your oven tends to cook the surfaces too quickly, place the dish further away from the element, or lightly cover your dip with aluminum foil. You’ll know it’s done when the top is becoming golden and bubbly.
5. Serve it straight from the oven, with a fresh Vienna loaf, or your favorite crusty bread. You could also provide dry crackers, or unflavored chips
